IGNORE EVERYTHING HERE AND UPDATE TO 10.4.9. SYNCS NATIVELY NOW, AND REMEMBER TO REMOVE THIS PLUGIN.
NOTICE
Edited 1 October: There is a better solution. The method described here is outdated.
A last minute revelation: following a hint I found, I have managed to figure out how to add iSync support for the new Nokia N73. It’s fairly straightforward.
The procedure:
* Go to Finder
* Control-click (or right click) on iSync, select Show Package Contents
* Go to Contents/Plugins/ApplePhoneConduit.syncdevice then /Contents/Plugins/PhoneModelsSync.phoneplugin/Contents/Resources
* Make a copy of MetaClasses.plist, for backup
* Open MetaClasses.plist in a text editor (TextWrangler or Smultron for me, TextEdit will work fine too)
* Insert this code from this page but replace all instances of N91 with N73.
* Just to be really anal, the bit that is supposed to be NOKN73.tiff, can be changed to NOKN70.tiff, since the N70 and the N73 looks more or less the same, and there isn’t a new .tiff icon for the N73 as yet.
I don’t guarantee this will make syncing work perfectly but for the initial task of moving all contacts into the new phone, it works fine.

Posted the question on Macuser.org.sg, as well as the solution I found for the N70. Wish Nokia would buck up instead of us having to hack our way through.

Not very impressed with Apple’s handling of iSync to date. I thought they’d update it with new device support with every OS update in order to keep it useful.
They haven’t.

You should try a nice alternative for iSync at http://www.zyb.com - I tried it and it actually has a touch of Mac-interface to it. worked fine with my N91 - guess it would be the same for your N73. How is the phone by the way? There is a lot of bugs in the N91
